Crudo di Cuneo Dop is a local product controlled by the third-party body INOQ – Istituto Nord Ovest Qualità. Farming, slaughtering and maturing are carried out within the province of Cuneo, in a space span of less than 90 kilometers. The selection of the animals is extremely careful to achieve the highest visual and organoleptic standards at the end of the maturation.
